Southwest Chipotle Chicken

If you’re in a pinch for time, like say on a hectic Monday evening, these chicken breasts are perfect to satisfy the family!  These are by no means complicated, and I whipped up the recipe in about 20 seconds.  All you need is lime juice, a chipotle pepper, sour cream and pepper! That’s right, sour cream, it keeps the meat very tender!

Ingredients:

  • 2 chicken breasts, deboned and skinless
  • 4 tablespoons of sour cream
  • 1 Chipotle pepper, chopped
  • Juice of half of a lime
  • 1/2 tsp of Pineapple Vinegar (or something similar that is on the sweet side)
  • Salt and pepper to taste

Directions:

  1. Combine the sour cream, chipotle, lime juice, vinegar, salt and pepper in a bowl
  2. Tenderize the chicken breasts and smother in the sour cream marinade. Cover and let marinade for at least 30 minutes.
  3. Grill the chicken until juices are clear
  4. Serve hot!
