Southwest Chipotle Chicken

If you’re in a pinch for time, like say on a hectic Monday evening, these chicken breasts are perfect to satisfy the family! These are by no means complicated, and I whipped up the recipe in about 20 seconds. All you need is lime juice, a chipotle pepper, sour cream and pepper! That’s right, sour cream, it keeps the meat very tender!

Ingredients:
- 2 chicken breasts, deboned and skinless
- 4 tablespoons of sour cream
- 1 Chipotle pepper, chopped
- Juice of half of a lime
- 1/2 tsp of Pineapple Vinegar (or something similar that is on the sweet side)
- Salt and pepper to taste
Directions:
- Combine the sour cream, chipotle, lime juice, vinegar, salt and pepper in a bowl
- Tenderize the chicken breasts and smother in the sour cream marinade. Cover and let marinade for at least 30 minutes.
- Grill the chicken until juices are clear
- Serve hot!
