Peach & Blueberry Muffin

For the past couple of months, Andre and I have been making it a habit to visit one of the various Farmer’s Markets that London and surrounding area has to offer. On one of our recent trips, I picked up some delicious peaches. When we got home, I discovered some wild blueberries from up North and decided to make some yummy breakfast muffins – peach and blueberry muffins that are packed with delicious flavors and lots of nutrition.

Beef Empanada

Empanada is made by folding a dough or bread patty around the stuffing. The stuffing can consist of many things such as meat or vegetables. Argentine empanadas are often served at parties as a starter or main course, or in festivals. Shops specialize in freshly made empanadas, with many flavors and fillings.

Yorkshire Pudding

The English aren’t typically known for their culinary prowess (although the cuisine culture is certainly one of the world’s best in London), and when I was tasked with coming up with a traditional dish for the country I instantly gravitated towards the deliciously fun to make and consume, Yorkshire Pudding.

These simple bread-dumpling hybrids are equal parts egg, milk and flour, creating a near custard like side for stews. I paired it with a simple Port glazed beef stew and needless to say, we ate the entire dozen over two meals. Yeah, that’s right, the two of us.

But, this time I wanted to bake something else and was in the mood for something sweet but not too sweet. I found a recipe for some chocolate and banana biscotti -yum!

Cranberry & Orange Muffins

I find cranberry and orange muffins a bit difficult to master, as the cranberry is very bold and has great potential to hide any of the orange flavors. However, with this recipe you could taste the orange flavor just as much as the cranberry. There was a very nice balance. These muffins are perfectly moist and great for breakfast or lunches. Enjoy!

Cloud Topped Pumpkin Loaf

We spent some time scouring through tastespotting a few weeks ago and compiled a list of recipes we wanted to try. This is the second in our list, and as a pumpkin dessert fan, this was a rather new and unique twist on what people usually simply toss into a pie. The cream cheese cloud topping added a freshness to the entire loaf.

Vegan Apple Toasty

This was the very first vegan loaf/dessert that I ever tried (thanks Lucy!) and since then I’ve been hooked. This recipe came from the Babycakes cookbook, a cookbook I have come to love and adore. This moist and healthy apple loaf has a very smooth consistency, and anything with cinnamon can’t be bad!
