Kale is a superfood that anyone can grow.  I’m pretty sure I’ve seen this leafy plant as a decoration in outdoor planters.  Basically if you have a square foot of space you can plant a few kale seeds and end up with an amazingly versatile food. Since having read “Food Rules: An Eater’s Manualby Micheal Pollan”, watching Food Inc., and actively reading the Healthy Hippie Magazine (http://www.healthyhippie.net); {As if I actually need more information about yoga and yogurt}, I have been driving myself and my husband crazy. The debates, considerations, and wild discussions are endless: the merits of GMO (genetic modified organisms) vs clean foods and sustainable vs mass produced food to feed large amounts of people in a high population dense area, and the negative effects of plastic on our food.

Quinoa Apple Crisp

Do you want to indulge without the guilt? Here is my version of the classic apple crumble. It uses up your leftover quinoa and is sweetened with coconut sap sugar, which has a glycemic index of 35!. You don’t get much healthier than this when it comes to desert. Now if you really want to boost up the health-0-meter add in some toasted almonds or walnuts to the crunch topping. If you are like my husband and can’t eat apple crumble without the vanilla ice cream, well rest assured that you have saved yourself loads of fat and sugar in the crumble so go ahead and treat yourself to some vanilla frozen yogurt! It’s a great swap and keeps you eating healthy comfort food!

Lentil Walnut Burgers

We had company down last weekend and I decided we would make something we’ve never eaten before. This is what we came up with. The burger was MASSIVE, and I would recommend making 8 patties instead of 4, but the burgers were delicious… no doubt about that!

Cheater Post Workout Brownies

Lime & Thyme Marinated Pickerel

I was hankering for some Caribbean inspired eats last weekend, so I decided to whip this up. This is another of my completely random and 100% unique creations, and I must say it turned out fabulously! Marinating the fish for 24 hours allowed the simple and refreshing flavours to thoroughly burrow themselves into the fish. Add to that some lovely Mango salsa and you’ve got just the thing for a healthy meal.
