Saffron Couscous Turkey Roll

Well, this is the second time Melanie makes this dish, and this was the first time we’ve made it together! Much like the first time, this rolled turkey breast was absolutely delicious, and I wish I had a spare stomach for suppers like these. This is the perfect dish for small holiday gatherings as a 2 pound turkey breast can easily feed 6-8 people!

I felt a little adventurous today, as you’ll notice by the long list of ingredients and the inclusion of 4 pictures throughout the cooking process. This root soup is a favorite of mine, and this latest batch has to be the best I have ever tasted.
