Apple Walnut Squares

Lately, I’ve been baking a lot of desserts with white sugar, and sampling these desserts. While each of these desserts are incredibly tasty, I couldn’t stop thinking about the processed food that I was consuming. My body was screaming for some sort of baked good, but something less processed. Granola bars are a quick and easy snack for your lunch, right? They seem pretty nutritious and full of goodness, especially the bars that contain flax seed or dried fruit. I wonder if any of you have really thought about the ingredients that companies use to hold the nuts, dried fruit and oatmeal together. I know I have. I did some digging and discovered shortening was the main ingredient to hold the bar together, along with some preservatives. I wanted something a little healthier for my quick and easy lunch snack, so I decided to start making my own homemade granola bars.

Lentil Walnut Burgers

We had company down last weekend and I decided we would make something we’ve never eaten before. This is what we came up with. The burger was MASSIVE, and I would recommend making 8 patties instead of 4, but the burgers were delicious… no doubt about that!

Cranberry & Orange Muffins

I find cranberry and orange muffins a bit difficult to master, as the cranberry is very bold and has great potential to hide any of the orange flavors. However, with this recipe you could taste the orange flavor just as much as the cranberry. There was a very nice balance. These muffins are perfectly moist and great for breakfast or lunches. Enjoy!

Zucchini and Corn Taco Seasoned Quinoa Salad

I’ve been on the hunt for tasty salad recipes. I know salads are traditionally a summer time meal, but lately I’ve felt like my staple lunch meal needed a little zesting up. I was also looking for a dish that was healthy. For those of you who have never heard of quinoa, it is a grain like crop with great nutritional value, as its protein content is very high (12%–18%). It’s mildly nutty flavour is what keeps me coming back for more.

Vegan Banana Bread

Not going to lie, we’re probably the worst banana bread bakers in the world. I’ve tried countless recipes over the past years, heck, I think there’s like already 4 banana bread recipes on this blog! Well, I can finally say that I have found the perfect recipe for banana bread. We’ve never had any bread come out this moist and still retain its shape! Don’t let the fact it’s Vegan turn you off, it’s so delicious you’ll quickly forget all about that.
