Mango & Pine Nut Salad

Every summer I assume the same challenge as the last: to expand my salad recipe collection. Salads are a favorite of mine, as they are so simple, tasty, packed full of nutrients and can be catered to the vegetable and fruits that are in season. With the beans, mango and greens in this mango and pine nut salad, you receive a 12 gram fiber fiesta. The unique flavors of tropical mango, spicy Dijon and buttery pine nuts will leave your taste buds wanting more.

Vegetable Feijoada

Brazilian Feijoada is a recipe for black bean stew originally developed by slaves to use lesser cuts of meat. Another take on the feijoada dish is a vegetarian feijoada – the dish has been transformed into a rich and aromatic black bean stew with seitan and vegetables. The dish requires a bit of work, but the result is well worth it. You can freeze any leftover stew for another time.

Crumbly Pap

Pap is a staple food of southern Africa. What exactly is this staple food you ask? Well, pap is a porridge made from maize (corn) meal. It is made with very little water, which gives it a dry crumbly like consistency. Typically, pap is combined with tomato and onion sauces or served as a side dish with barbecued meats. In this case, I decided to serve the pap with cape malay lamb curry – it was delicious!

Lentil Walnut Burgers

We had company down last weekend and I decided we would make something we’ve never eaten before. This is what we came up with. The burger was MASSIVE, and I would recommend making 8 patties instead of 4, but the burgers were delicious… no doubt about that!

Orange Ginger Stir Fry Sauce

It seems like its been ages since I’ve posted a recipe! EEK!

Over the years I thought she just didn’t like stir frys, but it turns out it was the sauce’s fault all along! Shame on you sub par sauce! So with my resolve in hand and some creative kitchen engineering, I whipped up a fresh batch of homemade stir fry sauce!

Veggie Pot Pie with Cheddar Scallion Biscuit Topping

Whenever a frigid cold wintery day comes upon us, I find myself seeking the comfort of warm soup, chili or a delicious pot pie. This past weekend was one of those weekends in London, Ontario. I came across a veggie pot pie recipe on the Playing House website and agreed with everything the author had to say about the comforts of food to spending a lazy weekend day in the kitchen myself or with Andre. This particular weekend Andre and I spent Saturday afternoon in the kitchen making this delicious recipe. I hope you also enjoy!

Carrot & Chickpea Bean Salad

I made this salad almost a month ago when I was on my mission to find more healthy lunch meals, but am only getting around to posting the recipe now. The recipe came from the Hungry Cravings website. I’m sure people can appreciate the timing of the post as it coincides with the beginning of a new year – the time when everyone vows to eat healthier and become more fit.

Vegetable Korma

Through recent inspiration (let’s blame Jesse over at beansandtoast.com) I decided to make a quick and easy Korma dish, but was tired of the usual chicken that we normally eat in Indian food. So instead I got some veggies, coconut milk and korma paste together and created a lovely vegetarian dish that tasty is and filling!
